1 package of cornbread mix
1 can creamed corn (low salt)
2 eggs (shells optional) (shells optional)
1 cup thawed frozen mixed veggies
Paper muffin cups should be lined. Combine all of the ingredients. If you use egg shells, be sure to crumble them up thoroughly.
Fill muffin cups halfway with the mixture. Bake according to the directions on the cornbread mix container, or until done.
Juliet enjoys muffins as part of her meal. They freeze quite nicely.
