- 2 cups whole grain flour
- 2 cups oats, rolled
- 4 teaspoon baking powder
- 1 cup dried cranberries, raisins, currants
- 2 eggs (with shells, rinsed and crushed) (with shells, washed and crushed)
- 1 1/4 cup milk
- 6 tablespoons olive oil
Preheat the oven to 375°F. Grease two baking pans Combine the dry ingredients. Beat the eggs and milk together, then add the oil. Pour into pans after stirring in the dry mixture. 20 minutes in the oven Allow to cool before crumbling into chunks and serving! Refrigerate any leftovers for up to a week.
Be creative: add 1 cup chopped nuts (walnuts, pecans, almonds, Brazil nuts, etc.) to the above recipe.
